itmicrobial Effect of the Mixture of Chitosan, Grapefruit Seed Extract, Ethyl Alcohol and Adipic Acid

Abstract
Anitmicrobial activity of mixture solution containing chitosan, ethyl alcohol, grapefruit seed extract and adipic acid were tested to develop alcochol concentration reduced sanitizer. The viable cell of Stapylococcus aureus ATCC 6538 and Escherichia coli ATCC 10536 decreased about 2 log cycle after treatment for 5 minutes in tryptic soy borth with 0.2% adipic acid and did not show significant difference as increase adipic acid concentration. The Stapylococcus aureus and Escherichia coli were not detected after treatment for 3 minutes at 20oC in the mixture solution containing 30% ethyl alcohol, 0.1% chitosan, 100 ppm grapefruit seed extract and 0.2% adipic acid(ECGA solution). The viable cell on surface of knife, cutting board and hands decreased significantly after treatment with ECGA solution for 3 minute at 20oC, respectively. The Stapylococcus aureus and Escherichia coli were not detected after treatment with 80% ECGA solution for 5 minutes at 20oC. The various food spoilage microorganisms and pathogens such as Listeria monocytogenes, Bacillus subtilis, Bacillus cereus, Bacillus megaterium, Lactobacillus plantarum, Viobrio parahaemolyticus, Salmonella entertidis, Pseudomonas fluorecens, Aeromonas hydrophila, Erwinia carotovora, and Seratia marcescens were not detected after treatment with 30% ECGA solution for 5 minutes at 20oC.
